"Enokitake, Winter Mushroom, Slimy Mushroom"
Pure mushroom culture on agar - medium

The Winter Mushroom has a long tradition in Asian cusisin. Enokitake produces smal but very delicious fruiting bodies.

Growing conditions:
Spawn run: 21 - 24 °C
Primordia formation: 4 – 10 ° C
Fruiting: 10 – 16 ° C

Convenient substrate:
Hardwood (most suitable: oak, beech, plum, maple, birch, alder)
For indoor cultivation we recommend woodchips mixture in substrate bags.

Enokitake can be found in the cold and moderate climate zone on the northern hemisphere, i.e. China, Siberia, Asia Minor, Europa, North America and Japan; on the sothern hemisphere in Australia. The fruiting bodies have a diamteter of 2 - 10 cm, the shaft is 3-8 cm long. Enokitake produces white spores.

Average nutrition value:
100 g dried fruiting bodies contains: 346 cal. | protein: 26,59 g | Fat: 3,06 g | carbohydrates: 52,95 g

Cultivation of Enokitake has a long tradition in China and was documented for the first time around 800 AD. As soon as the fruiting bodies has grown to its full size, the cultivators at that time rub them on wood logs. With a bit of luck there will be a good harvest in the year after. The usage of spawn dowls, as it is practised today, wil be more effective.
